Quick & Tasty Eggs and Migas Recipe

A traditional and timeless Tex-Mex dish everyone and their grandma loves. Mama Grande's Corn Tortillas are the perfect companion to this delicious combination of scrambled eggs, crispy tortilla strips, and savory toppings. 

Get ready to enjoy a hearty and flavorful breakfast or brunch with this easy-to-make classic recipe!

 

Ingredients:

  • 4 of your favorite Mama Grande Corn Tortillas (Red, Yellow, Cactus, White)
  • 4 large eggs
  • 1 tablespoon vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell peppers (any color)
  • 2 cloves garlic, minced
  • 1 jalapeño, seeds removed and finely chopped (optional, for spice lovers)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste
  • 1/4 cup shredded cheddar or Monterey Jack cheese
  • Chopped fresh cilantro, for garnish
  • Salsa or hot sauce, for serving

Instructions:

  1. Prepare the Tortilla Strips:
    • Cut Mama Grande's Corn Tortillas into thin strips.
    • Heat the vegetable oil in a skillet over medium heat.
    • Add the tortilla strips to the skillet and cook until golden brown and crispy, stirring occasionally.
    • Remove the tortilla strips from the skillet and set aside.

2. Scramble the Eggs:

    • In the same skillet, add diced onion, bell peppers, minced garlic, and jalapeño (if using).
    • Sauté until the vegetables are tender and fragrant.
    • In a bowl, beat the eggs with cumin, paprika, salt, and black pepper.
    • Push the sautéed vegetables to one side of the skillet and pour the beaten eggs into the other side.
    • Scramble the eggs, gently stirring until cooked through.

3. Combine the Tortilla Strips and Eggs:

    • Add the crispy tortilla strips to the skillet with the scrambled eggs.
    • Mix well, allowing the tortilla strips to soak up some of the egg mixture.
    • Cook for an additional minute to let the flavors meld together.

4. Serve and Garnish:

    • Transfer the eggs and tortilla mixture to serving plates.
    • Sprinkle shredded cheese over the top while it's still warm, allowing it to melt.
    • Garnish with chopped fresh cilantro.
